A vegetable grown in its own season, in its own weather, needs the least help and gives the most in return, in taste and in goodness. Forcing a crop out of season means propping it up with more inputs and more protection, which is the opposite of how we farm. So rather than promise the same things all year, we grow what each season does best.
It means what arrives from the farm shifts through the year, and that is the point. Winter brings its own crops, summer another set, the monsoon another still, each picked at its peak and grown the same natural way as everything else we raise. There is always something fresh in the field.
