Brinjal rewards patience and living soil. We feed the ground with Jeevamrut and keep it covered so it holds moisture through the day, which is what gives the fruit its weight and its glossy skin. The plants crop for months at a stretch, so we walk the rows often and pick each brinjal at the right moment rather than clearing the whole plant at once.
A young brinjal feels light for its size and springs back when you press it, and the skin shines. That shine fades as it ages and the seeds inside harden, so we send it out young. Keep it out of the fridge in a cool corner of the kitchen and use it within a few days, while the flesh is still soft and sweet.
This is a vegetable that loves slow heat. Roast a large one whole over a flame for a smoky bharta, cook smaller ones down into bharwa baingan with a spiced filling, or let them melt into a ringan-bateta curry. Because the flesh drinks up whatever it is cooked with, honest, clean-grown brinjal makes a real difference to the finished dish.
