Karela is a hardy summer climber, and its natural bitterness is part of the reason it needs so little help to grow well. We raise it on healthy soil and pick the gourds while they are firm, green, and ridged. Because the plant looks after itself, it is a crop that suits natural farming perfectly, with no need for chemical protection.
Bitter gourd has a long place in Indian home cooking and traditional wellness for its bracing, cleansing character. It is one of those vegetables that families keep coming back to precisely because it is not sweet or soft, but honest and wholesome. Grown clean, that character comes through all the more.
To soften the bitterness, many cooks rub the sliced karela with a little salt and set it aside before cooking. From there it takes beautifully to stuffing with spices, frying into crisp karela chips, or slow-cooking with onion and jaggery. Keep it firm and green in the fridge and use it within a few days.
